Another product of the Posedarje Smoked Ham Factory is the Dalmatian smoked neck of pork. This is a cured and smoked neck of pork, which is specially processed. It is salted down with sea salt and left to cure for 2-3 days. After that, it is soaked in wine and rolled in a special mixture of spices. It is then wrapped in intestine and net and is immediately exposed to smoke for approximately 30 days after which it is left to cure in the north-easterly wind for the next two months. The Dalmatian smoked neck of pork has been awarded numerous prizes and also bears the mark of "Authentic Croatian Quality".
